An air fryer is a compact convection oven: a heating element plus a fan moving hot air fast. Understanding that explains most of its behaviour.
Capacity in litres is not the same as usable space
Manufacturers quote basket volume, but food cannot fill the basket to the brim or air cannot circulate. Expect to use roughly half to two thirds of the stated capacity. For two people, four to five litres is a practical starting point.
Wattage and heat-up time
Higher wattage means faster recovery when food is added, but also a heavier load on a household circuit. If you plan to run it alongside a kettle or microwave, check your circuit capacity.
Basket geometry matters
A wide shallow basket browns more evenly than a narrow deep one, because more surface area faces the airflow. Round baskets with a removable tray are easier to clean than square ones with sharp internal corners.
Coatings and cleaning
Non-stick coatings vary in durability. Look for a removable, dishwasher-safe basket and avoid abrasive cleaning, which shortens coating life more than normal use.
The oil-free claim
Air frying reduces the oil needed compared with deep frying, but food still needs some oil to brown and crisp. Claims of frying with no oil at all are marketing, not technique.
Noise and footprint
These units are loud, on the order of a range hood, and take counter space. Measure your counter before buying.
